Almost everyone who has decided they need a better frying pan was actually experiencing a temperature problem. Sticking has a physical cause, it is the same cause in nearly every case, and once you can recognise it the fix takes about two minutes and no money.

What is actually happening

When protein meets metal that is not hot enough, it bonds to the surface. The bond is chemical rather than mechanical — the proteins form direct connections with the metal, and pulling the food away tears it, leaving a layer behind.

Get the metal hot enough first and something different happens. The surface moisture flashes to steam at the point of contact, the proteins set before they can bond, and a crust forms that lifts cleanly. The food releases itself, usually within a minute or two, and if you leave it alone it will tell you when it is ready by letting go.

This is why the single most common cooking mistake is not too much heat. It is too little heat, and then moving the food too early because it is sticking.

The two minutes

Heat the empty pan on medium for a minute or two before anything goes in. You are waiting for the metal itself to reach temperature, not the oil.

The classic test works: a few drops of water flicked onto the surface. Too cold and they sit and slowly evaporate. Just right and they skitter across the surface as distinct beads — the Leidenfrost effect, where a vapour layer forms under each droplet and lets it glide. That is the moment to add the oil.

Then add the oil, let it thin and shimmer for a few seconds, and put the food in. It should make a noise. If it goes in silently, the pan was not ready.

And then leave it alone

The hardest instruction in cooking. Once it is in, do not move it, do not poke it, do not lift a corner to check. Every one of those actions drops the surface temperature and interrupts the crust that is trying to form.

Wait until the food moves when you shake the pan. That is not a rule of thumb — it is the food telling you the crust has formed and the bond has released.

Where non-stick fits, and where it does not

Non-stick coatings work by presenting a surface that proteins cannot bond to, which is genuinely useful for eggs, fish and pancakes.

They are the wrong tool for anything you want browned. The coating cannot be run at the temperature a good sear needs, and manufacturers are clear that overheating degrades it — the general guidance from consumer safety bodies, including the US Consumer Product Safety Commission, is to avoid heating empty non-stick cookware and to keep it well below smoking temperatures.

So the honest answer is that a kitchen wants both: non-stick for delicate proteins at moderate heat, and stainless or cast iron for anything that should develop a crust.

When to retire a non-stick pan

Coatings wear out, and a scratched or flaking one is worth replacing rather than persevering with — partly because it has stopped doing the one job it was bought for, and partly because you would rather the coating stayed on the pan. Regulators have been tightening their attention on the per-and polyfluoroalkyl chemistry used in some coatings; the EPA’s overview of PFAS is the plain-language starting point if you want to understand what the current concern actually covers.

The practical rule is simple: once a non-stick pan is scratched through to the metal or the surface has gone patchy and dull, it is finished. Metal utensils and dishwashers both shorten that life considerably.

Seasoning, briefly and without mysticism

Cast iron and carbon steel become non-stick through seasoning: thin layers of oil polymerised onto the surface by heat, building a slick coating over time.

The practical version is unglamorous. Cook fatty things in it. Wipe it out rather than scrubbing it back to bare metal. Dry it on the heat for thirty seconds so it cannot rust. That is genuinely the whole ritual, and the elaborate versions circulating online mostly describe how to rebuild a seasoning that everyday cooking would have maintained anyway.

The other three causes

Temperature explains most sticking. Three other things explain the rest:

Wet food. Surface moisture has to boil off before the surface can brown, and while it does the food sits in the temperature range where it bonds. Pat things dry.

A crowded pan. Too much food at once drops the pan temperature and releases enough steam that nothing browns. Cook in batches; it is faster than it looks because each batch cooks properly.

Residue from last time. A thin film of burnt-on protein or sugar is itself sticky. Deglaze while the pan is hot — water or wine into a hot pan lifts almost everything with a wooden spoon, and takes less time than soaking.

If you only remember one thing

Heat the pan before the oil, and the oil before the food. Then wait for it to release rather than forcing it.

That sequence helps with sticking in most home kitchens, on whatever pans are already in the cupboard.
